Berliner Weisse is a light sour wheat beer originating from Germany brewed with malted barley and wheat and fermented with yeast and bacteria.
About a year ago, we decided to try some variations on this simple recipe by substituting different grains for the wheat.
This particular set of barrels was brewed using buckwheat instead of wheat.
The resulting beer is lighter in alcohol, crisp, tart, and the buckwheat lends a character that is familiar, yet at the same time, difficult to place...
