A Blend of Buckwheat and Golden Sour Beers Aged in Oak Barrels With Local Honey, Wine Grapes, Tonka Beans, Vanilla and Cherry Noyaux.
Bees dance to share directions to food, water, and other destinations. Our destination was a delicious honey beer, but every journey needs a starting point... We began by brewing a small mead and then blending selected barrels of sour beer into it. The history of some of these barrels is too involved to recount fully here, but suffice it to say, some had liquids that go back 4 or more years and consisted of no fewer than 5 different beer recipes plus wild chardonnay and pinot noir components. Complementary vanilla, almond, and nutty flavours were infused using dried and aged cherry noyaux, tonka beans, and vanilla beans. A final burst of bee pollen elevated the honey character to new heights. Welcome to our intended destination! Thanks, bees!
